Shrimp, Mussels in Tomato Sauce

Ingredients:

For the seafood:

  • 200g (7 oz) shrimp, peeled and deveined
  • 200g (7 oz) mussels, cleaned and debearded
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 onion, finely chopped
  • 1 can (400g / 14 oz) crushed tomatoes
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika (optional for extra flavor)
  • 1/2 cup white wine or vegetable broth
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

For the crispy bread:

  • 4 slices of baguette or crusty bread
  • 2 tbsp olive oil
  • 1 garlic clove, peeled

Instructions:

1. Prepare the crispy bread:

  • Preheat the oven to 180°C (350°F).
  • Arrange the slices of bread on a baking tray.
  • Drizzle olive oil over each slice, then rub each slice with the cut side of a garlic clove.
  • Bake for 10-12 minutes, or until the bread is golden and crispy. Set aside.

2. Prepare the tomato sauce with seafood:

  • In a large pan, heat 1 tbsp of olive oil over medium heat.
  • Add the chopped onion and garlic, and sauté for 3-4 minutes, until soft and fragrant.
  • Stir in the crushed tomatoes, white wine (or broth), oregano, paprika, salt, and pepper. Let it simmer for 10 minutes to thicken.

3. Cook the seafood:

  • Add the shrimp and mussels to the pan. Cover and cook for 5-7 minutes, or until the shrimp turns pink and the mussels have opened.
  • If any mussels do not open, discard them.

4. Serve:

  • Ladle the seafood and tomato sauce into bowls. Garnish with fresh green.
  • Serve with the crispy bread on the side for dipping.
