Ingredients:
For the seafood:
- 200g (7 oz) shrimp, peeled and deveined
- 200g (7 oz) mussels, cleaned and debearded
- 1 tbsp olive oil
- 2 garlic cloves, minced
- 1 onion, finely chopped
- 1 can (400g / 14 oz) crushed tomatoes
- 1 tsp dried oregano
- 1/2 tsp smoked paprika (optional for extra flavor)
- 1/2 cup white wine or vegetable broth
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
For the crispy bread:
- 4 slices of baguette or crusty bread
- 2 tbsp olive oil
- 1 garlic clove, peeled
Instructions:
1. Prepare the crispy bread:
- Preheat the oven to 180°C (350°F).
- Arrange the slices of bread on a baking tray.
- Drizzle olive oil over each slice, then rub each slice with the cut side of a garlic clove.
- Bake for 10-12 minutes, or until the bread is golden and crispy. Set aside.
2. Prepare the tomato sauce with seafood:
- In a large pan, heat 1 tbsp of olive oil over medium heat.
- Add the chopped onion and garlic, and sauté for 3-4 minutes, until soft and fragrant.
- Stir in the crushed tomatoes, white wine (or broth), oregano, paprika, salt, and pepper. Let it simmer for 10 minutes to thicken.
3. Cook the seafood:
- Add the shrimp and mussels to the pan. Cover and cook for 5-7 minutes, or until the shrimp turns pink and the mussels have opened.
- If any mussels do not open, discard them.
4. Serve:
- Ladle the seafood and tomato sauce into bowls. Garnish with fresh green.
- Serve with the crispy bread on the side for dipping.
